pumpkin roll – gearing myself up for fall holiday baking. I’ve been in a baking mood a lot lately, I assume from the amount of schoolwork that has been on my plate lately:) the end of the semester is starting to loom already. the filling of this is cream cheese frosting that has greek yogurt in it, so it is sweet and tangy at the same time.

and last but not least,
this morning i put cinnamon rolls from a tube onto my waffle iron and this was what resulted…basically cinnamon roll biscuits that were crunchy on the outside. now I want to try with homemade cinnamon rolls….
I came close though! I finished my mom’s mittens about ten mittens before we left for church, and while I knitted some on the red pair of socks in the photo above..as you can see, I most obviously didn’t finish it. However, the recipient doesn’t mind one bit, and everyone else loved their knitted gifts.
I made red and green cupcakes on Christmas eve. The insides were red and green..kind of more pink and green, but close enough. And I put crushed candy canes on top of some of them.
My christmas was very good..I hope everybody else had a good one too.
Holy crap a lot happened this weekend.
First and foremost: THE HOLY WAR!! I went, I saw, I had a boatload of fun. Utah beat BYU 48-24, making our season 12-0. It was awesome to watch, I actually vaguely understood some of the football, and we rushed the field after the game ended. Definitely an unforgettable experience. I got some pictures and video. I also baked a BUTTLOAD on Friday. Well, Thursday and Friday combined. Thursday was like pumpkin extravaganza, and Friday I made RAINBOW CUPCAKES and Sugar cookies, which I don’t think turned out that well.
The rainbow cupcakes were amazing..They not only tasted good, but they looked amazing as well. Like, seriously. If I owned a bakery, I’d call it Rainbow Cupcakes, because they would be my specialty. I used this recipe for the cupcake batter and followed her instructions for making them rainbow as well. I just used less colors..and managed to make my cupcakes freaking enormous. Whoops!
Next time I think I want to find some food coloring that produces more vibrant colors (less pastels) and try something interesting with the frosting. For Christmas I think I’m gonna make some red and green ones!
On Sunday I ended up making some Pecan Pie Bars to go with dinner, I didn’t take any pictures but HOLY CRAP are they delicious. That is pretty much it for this weekend. Doesn’t sound like much, but it felt action packed to me. This week however, is a pretty lazy one. I have school tomorrow and then I leave early on Wednesday morning to Cordova for Thanksgiving! I’m super excited to see my family and visit Cordova, it is so pretty.
Last weekend it was the Marble Pumpkin Cheesecake, which was delicious but not pretty, and I never got pictures of it.
Then yesterday I discovered a recipe for Chocolate Chip Pumpkin Muffins. I had to go to the grocery store anyways, and decided to try them.
Freaking seriously omg delicious. They are SO YUMMY. And since Smith’s only had the huge cans of pumpkin, I have a ton left over..from that same blog, I found a recipe for Pumpkin Scones. I was bored last night after making the muffins, so I decided on the scones too.
Holy epic-ly delicious. Seriously, I can’t believe how delicious these are. It’s amazing. I still have pumpkin left over..so I’m sure there will be more pumpkin baked goods later..
Oh, I have been getting so little sleep this week. Totally unneccessary sleep deprivation too, I haven’t actually needed to stay up as late as I have been..I just have. And now I’m paying it for it. Last night I had been falling asleep at like 11ish, then I decided to get out of bed and teach myself to crochet (thus resulting in my previous post) and then I managed to stay up until nearly 3. Whoops! Woke up when my alarm went off this morning and thought, “Oh, just five more minutes..” Woke up nearly two hours later at 10.30. Class starts at 10.45, and is a 25 minute walk across campus..I threw on clothes, brushed my teeth, grabbed a granola bar and ran out the door. I caught a shuttle and made it to class only like ten minutes late! Go me.
I did finish my Bounce hat yesterday though! It turned out quite well. As usual with hats knit flat, I hate the seaming. But I really like how it turned out. I might give blocking a try and see if it makes it any bigger..it looks really ridiculous on me, as I generally do in hats..Oh well. And I am in freaking love with this colorway. Seriously.
And I am totally in love with the crown decrease..I dunno why, I just love it.

Another thing I am in love with? Old Navy long sleeve scoop neck shirts. I ordered two of them last week cause I got a 30% off coupon in my email and I couldn’t resist. I want one in pretty much every color.

This weekend should be a fun one. Friday I am planning on trying to make some rainbow cupcakes, and I think I’m going to make the hungry girl onion rings. When I was walking to Aerobics on Wednesday somebody was grilling and it made me crave a hamburger hardcore..so I’m thinking onion rings and veggie burgers for dinner for Friday! And Saturday is the Utah VS BYU Game..I am going, as a Utes supporter, of course! That should really be a blast. I’d also like to make some Pumpkin Chocolate Chip Muffins, that might happen today though. I love that blog, I just discovered it last night and the pictures are always beautiful and everything looks delicious.
Ah well, time for me to get to the grocery store. Hope everybody is having a great Thursday!
This weekend has been a nice one. I did a fair amount of knitting and baking! Weeee.
On Friday night I tried a recipe from a Weight Watchers cookbook my mom recently sent to me, called Best Eats. The recipe is called Pulled Chicken BBQ Wraps. I thought the bbq sauce was pretty meh. Not terrible, but definitely not amazing.
My friend Justin, who came over so I could try the recipe on me, thought they it was better in a taco shell as opposed to the whole wheat tortillas. There is a lot of left overs, so maybe I’ll try that one of these days. We also ended up making a batch of snickerdoodles, although I didn’t take any pictures. They taste fine, but I think they aren’t as chewy as I’d like them to be. My first time making snickerdoodles though, so maybe next time I’ll try a different recipe.
On Saturday morning I went to Weight Watchers, and then after I was at the grocery store and got a phonecall from my mom with some sad news, which prompted me to come back to the apartment and bake a cheesecake. I had been planning on it anyways, but the sad news urged me to make it earlier than planned. I haven’t gotten any pictures of it yet, as a) it’s not going to be eaten until this evening and b) it has been chilling in the fridge.
In knitting news, I finished a pair of mittens this weekend! About two weeks ago, I knitted a Swell Hat as a Christmas present for my younger brother. My sisters are getting hat/mittens sets for Christmas so I decided that Trevor would get them too. So I embarked on a pair of mittens to match. I loosely based the actual mitten off of this pattern, with a lot of mods. I knitted up until a few rows after the gusset, then I used the chart from the hat. I reversed the colors, as I definitely didn’t have enough blue to do them the same way I did the hat. They turned out wonderfully. I still could use some work on my stranded color techniques..but I am getting better!!
I also taught myself how to crochet (holy crap single crochet is sooo easy!!) and kind of made up an edging for the hat, as to stabilize the curl from the stockinette.
Pretty cute, huh? I’m stoked with how they turned out.
